High Protein / Healthy Choice Menus

These menus have been designed for our ever changing lifestyles and eating habits. Please feel free to mix and match different options, however please keep in mind there is a minimum of 10 people for these menus and 20 people to split entrees and salads. Please choose one selection from each category. Entrees chosen determines price of meal.
High Protein
Salad Options Caesar Salad (no croutons) Tomato and Mozzarella Salad drizzled with Italian dressing and fresh basil. Garden Salad with cucumber, radish, cauliflower, broccoli, cherry tomatoes and mushrooms. Romaine leaves with artichoke hearts, goat cheese, green and kalamata olives, mushrooms, and roasted pumpkin seeds. Almost Traditional Cobb salad with crumbled egg, bacon, turkey slices, bleu cheese crumbles, and chopped tomatoes. (sorry, no avocado) but we do have delicious chunky bleu cheese dressing. ($2.50 additional per person)
Entrees Steak and Chicken Kebabs topped with garlic butter $13.95 Sliced Top Sirloin Steak with roma tomato relish $13.95 Chicken Picatta (no flour on the chicken) $12.95 Chicken Rollatinni stuffed Chicken Breast with mozzarella cheese, ham, spinach and mushrooms. Served with cream sauce. $13.95 Macadamia Crusted Salmon with lemon cream sauce. $13.95 Deli Platter of assorted cold cuts, served with lettuce cups in place of bread. $10.95 Grilled Chicken breast topped with grilled asparagus and hollandaise sauce. $13.95 (sub shrimp for the asparagus $3.00 additional per person) Chicken and Ribs, roasted whole pieces of chicken with our tender beef or baby back ribs. $13.95 (please note ribs are cooked with BBQ sauce) Beef Pot Roast with butternut sauce. $13.95
Sides Roasted cauliflower with garlic Steamed or grilled asparagus Broccoli and snow peas with cheddar cheese sauce Bacon and cheese stuffed mushroom caps
Dessert Fill up on the beef not a lot of choices here Berry bowl of fresh strawberries (raspberries and blueberries in season) A bowl of red delicious apples Assorted whole and shelled nuts (bring your own nut cracker)
Healthy Choice We prepare these meals with a little olive oil or none at all
Salad Choices We have the following fat free dressings Ranch – Raspberry Vinaigrette – Italian Garden Salad – lots and lots of veggies Spinach Salad – Shredded greens, yellow and red peppers, cucumbers, dried cranberries, fresh raspberries and candied walnuts (water used in place of butter to candy walnuts) Southwest Salad – Shredded greens, corn, black beans, skim milk mozzarella cheese, cilantro, chopped tomatoes, jicama (tortilla chips on the side)
Entrees Chicken Tacos – 3 large flour tortillas filled with a pinch of shredded cheese, lettuce, salsa, and 5 oz of lean grilled chicken breast. Served with taco sauce on the side. $11.95 Grilled Chicken Breast (5oz chicken breast per serving) with no oil grilled vegetables topped with parmesan cheese. $10.95 Broccoli Sun Dried Tomato Chicken Pasta – fussili pasta, crushed garlic, broccoli, sundried tomatoes (no oil), 5oz chicken breast, chicken stock, and parmesan cheese. $11.95 Turkey Breast – lean and delicious with gravy $11.95 Chicken Stir Fry – We take any vegetable we can find in the kitchen and wok it for you with chicken or tofu. $11.95 Grilled Vegetables Lasagna – sundried tomatoes, spinach, red and yellow roasted peppers, with roasted garlic. $11.95 Baked Potato Bar – no butter but everything else. $11.95
